How does something like the Star Wars Universe maintain its canon?
with so many independent writers adding to it, how can Lucas-arts or any other running organization filter or determine a canon? Considering the size and character diversity also it seems almost impossible.
Lucas Licensing maintains a database of the fictional elements of Star Wars called the Holocron continuity database. It was developed by Leland Chee in 2000. According to him, there are items in the database that have been submitted at the earliest stages, but have never been published about or seen in a Star Wars medium so the database is very rarely ever in public display.
The Holocron is an internal database maintained for the express purpose of trying to maintain continuity within all licensed products. The Holocron is sorted into four levels of canon, reflecting LFL's canon and continuity policies: G, C, S, and N.
G (George Lucas) canon is absolute canon. This category includes the six films, the deleted scenes from the films, the novelizations of the films, the radio dramas based on the films, the film scripts, and any material found in any other source (published or not) that comes directly from George Lucas himself. G canon outranks all other forms of canon.
C (continuity) canon refers to the main body of EU work, and is the next most authoritative level of canon. All material published under the Star Wars label that doesn't fall into either G, S, or N canon is C canon and is considered authoritative as long as it isn't contradicted by G canon.
S (secondary) canon refers to older, less accurate, or less coherent EU works, which would not ordinarily fit in the main continuity of G and C canon. For example, this includes the popular online roleplaying game Star Wars Galaxies, and certain elements of a few N-canon stories.
N continuity material is also known as "non-canon" or "non-continuity" material. What-if stories (such as those published under the Infinities label) and anything else that cannot at all fit into continuity is placed into this category. "N-continuity" is not considered canon.

I don’t like Star Wars articles because the comments are always so anti-prequel. They’re really not bad. Just because they’re not as good as the original trilogy doesn’t mean they suck. Nothing will be as good as the original trilogy.

I have helped young people get into several colleges including Harvard Law School. You ended your first sentence with a preposition. If the rest of the paper is like the first line it will be impossible to fix it and stay within your rules.
A second word of advice; you are writing to impress someone. Doing such a thing is a very bad idea. Write to express, not impress. If you do that, your writing will be better received and you will be happier with it as well.

I acutally saw these Pin-Ups some time ago via TheForce.net, and they're still fantastic. Truth be told, I've seen better on DeviantArt and from Artists like Oni and Mirawi (both of whom do *alot* of Adult/XXX rated Star Wars Art) which capture the original look of the 1940s era Pin-Ups for the Armed Services better. Still, these are just great and Feng really shows his talent.
I followed the link here from Scifiwire and alot of comments mirrored those here. That posters like this would seem out of place or they're not Canon. Being a Epic Star Wars Nerd myself, I've lost count of the number of times I've had discussions about how the Films (both OT and PT) are the only things that matter and content inspired by or from the Expanded Universe does not apply. Often, I'm shocked at how vehement some of my fellow fans can get over this. After-all, we're not Trekkies. Often, I've tried to be the mediator by imparting my own view point about the EU and the “canon” issue.
I look at this way; you have the G.L. Universe (i.e. the Trilogies, TCW, etc) which could be considered the “Canon” Universe, then you have the EU (The Thrawn trilogy, KOTOR, etc) which can be considered an alternate timeline where many similar things happened in the timeframe depicted in the films but certain details occured differently in the past and post RotJ. I've always felt this is how Lucasbook and Del-Ray before it should have approached the EU in regards to the Films, sadly, they've often had to ret-con the EU because of something featured in the PT or TCW. The issue with Karen Traviss was a perfect example of that.
Still, at the end of the day, when it comes to Art like what we see above, I think the fans should just be able to enjoy it, either in a very “guy” way, or just because it's some awesome looking Star Wars Art.

All a matter of what the article was written in and the character encoding being used. You can change your browser's character encoding from the View Menu and see if it clears up. Some of the examples you show look like something Word would use and that may be what was used to make the web page. Worse thing to use for web pages. Plus, the page may not even be coded properly using a meta character set tag.
Just experiment with your browser's character encoding which goes hand-in-hand with the font being used. Some fonts used in a browser, when a family is not called out on the web page, will cause problems because that character is not in that font family.
